Ingredients

  • 1 head Cauliflower florets
  • 2 teaspoons Olive oil
  • 2 cloves Garlic, minced
  • 0.25 cups Unsweetened almond milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1.25 pounds Lean ground turkey
  • 1 medium Yellow onion, diced
  • 1 medium Carrot, diced
  • 1 medium Celery stalk, diced
  • 0.5 cups Frozen peas
  • 2 tablespoons Tomato paste
  • 0.5 cups Low-sodium chicken broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoons Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a large pot of water to a boil. Add the cauliflower florets and cook for 10-12 minutes, or until tender. Drain well.

Step 3

In a blender or food processor, combine the cooked cauliflower, 1 teaspoon of olive oil, 1 clove of minced garlic, almond milk, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Blend until smooth and creamy. Set aside.

Step 4

Heat the remaining 1 teaspoon of olive oil in a large skillet over medium heat. Add the onion, carrot, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables soften.

Step 5

Add the remaining clove of minced garlic to the skillet and cook for 1 minute, stirring constantly.

Step 6

Add the ground turkey to the skillet. Cook for 6-8 minutes, breaking it up into small pieces, until no longer pink.

Step 7

Stir in the tomato paste, chicken broth, Worcestershire sauce, thyme, remaining salt, and black pepper. Let the mixture cook for 5 minutes, allowing the sauce to thicken slightly.

Step 8

Mix in the frozen peas and remove the skillet from heat.

Step 9

Spread the turkey mixture evenly in the bottom of a medium-sized baking dish. Spread the mashed cauliflower evenly on top.

Step 10

Sprinkle with paprika, if using, for extra color and flavor.

Step 11

Bake in the preheated oven for 20 minutes, or until the edges are bubbling and the top is slightly golden.

Step 12

Remove from oven and let rest for 5 minutes before serving.
