Ingredients

  • 2 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 1 medium Yellow onion, diced
  • 1 pound Ground Italian sausage (mild or spicy)
  • 28 ounces Crushed tomatoes (canned)
  • 4 cups Chicken broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Zucchini, spiralized into noodles
  • 0.5 cup Grated Parmesan cheese (for garnish, optional)
  • 4 units Fresh basil leaves (for garnish, optional)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add minced garlic and diced onion. Sauté for 3-4 minutes, until the onion becomes translucent and fragrant.

Step 3

Add the ground Italian sausage to the pot. Cook and break it up with a spoon until it is browned and fully cooked, about 6-8 minutes.

Step 4

Stir in the crushed tomatoes, chicken broth, and tomato paste. Mix well to combine.

Step 5

Add Italian seasoning, salt, and black pepper to the pot. Bring the soup to a simmer over medium-high heat.

Step 6

Lower the heat to medium-low, cover the pot, and let the soup simmer for 15 minutes to allow the flavors to develop.

Step 7

Add the spiralized zucchini noodles to the soup and cook for an additional 5 minutes, or until the zucchini is tender but not mushy.

Step 8

Taste the soup and adjust the seasonings if needed.

Step 9

Ladle the soup into bowls and garnish with grated Parmesan cheese and fresh basil leaves, if desired.

Step 10

Serve hot and enjoy your guilt-free spaghetti soup!
