Ingredients

  • 1.5 cups Almond flour
  • 0.5 cups Coconut flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Xanthan gum
  • 3 large Eggs
  • 0.5 cup Water
  • 2 tablespoons Olive oil
  • 1 teaspoon Sesame oil
  • 2 cups Avocado oil

Directions

Step 1

In a large bowl, combine almond flour, coconut flour, baking powder, salt, and xanthan gum. Mix well to ensure all dry ingredients are evenly distributed.

Step 2

In a separate bowl, whisk together the eggs, water, olive oil, and sesame oil until well combined.

Step 3

Gradually pour the wet ingredients into the dry ingredients, mixing with a spatula until a dough begins to form. The dough should be cohesive and slightly sticky.

Step 4

Place the dough on a lightly floured surface with a sprinkle of almond flour to prevent sticking. Knead gently for about 1-2 minutes.

Step 5

Roll the dough out into a rectangle about 1/2 inch thick.

Step 6

Using a sharp knife or a dough cutter, cut the dough into strips approximately 1 inch wide and 4 inches long.

Step 7

Heat the avocado oil in a deep frying pan or a wok over medium-high heat until it reaches 350°F (175°C).

Step 8

Carefully drop a few dough sticks into the hot oil, avoiding overcrowding, and fry them for 2-3 minutes per side or until they are golden brown and puffed up.

Step 9

Once cooked, remove the dough sticks with a slotted spoon and place them on a plate lined with a paper towel to drain excess oil.

Step 10

Repeat the frying process with the remaining dough sticks.

Step 11

Serve warm, ideally with a side of low sugar soy milk or your favorite dipping sauce.
