Ingredients

  • 6 medium russet potatoes
  • 4 large eggs
  • 2 stalks celery
  • 0.5 medium red onion
  • 0.25 cup pickle relish
  • 0.75 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 2 tablespoons fresh parsley (optional)

Directions

Step 1

Peel the potatoes and cut them into bite-sized chunks. Place them in a large pot of cold, salted water.

Step 2

Bring the water to a boil and cook the potatoes for 10-12 minutes, or until they are fork-tender but not falling apart. Drain and let cool completely.

Step 3

While the potatoes are cooking, place the eggs in a small pot and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes. Drain and transfer the eggs to a bowl of ice water to cool. Peel and chop the eggs once cooled.
