Ingredients

  • 3 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 small Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 250 grams Button or cremini mushrooms, finely sliced
  • 2 tablespoons All-purpose flour
  • 2 cups Vegetable or chicken broth
  • 1 tablespoon Soy sauce
  • 0.5 teaspoons Dried thyme
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tablespoons Heavy cream (optional)

Directions

Step 1

Heat a large skillet or saucepan over medium heat. Add the butter and olive oil, allowing the butter to melt completely.

Step 2

Add the finely chopped onion and sauté until soft and translucent, about 4-5 minutes. Stir frequently to prevent browning.

Step 3

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the sliced mushrooms to the pan. Cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and appear golden brown.

Step 5

Sprinkle the all-purpose flour evenly over the mushroom mixture. Stir well and cook for 1-2 minutes to remove the raw taste of the flour.

Step 6

Slowly pour in the vegetable or chicken broth, whisking constantly to avoid lumps. Bring the mixture to a simmer.

Step 7

Add the soy sauce, dried thyme, salt, and black pepper. Stir to combine, and let the gravy cook for 5-7 minutes or until it thickens to your desired consistency.

Step 8

For a creamier gravy, stir in the heavy cream at the end and cook for an additional 1-2 minutes.

Step 9

Taste and adjust seasonings if necessary.

Step 10

Serve hot over your favorite dish, such as mashed potatoes or roasted meat. Enjoy!
