Ingredients

  • 6 medium Yukon Gold potatoes
  • 2 cups Ham (fully cooked, diced)
  • 1 cup Celery (diced)
  • 0.5 cup Red onion (finely chopped)
  • 0.5 cup Dill pickles (chopped)
  • 0.75 cup Mayonnaise
  • 0.25 cup Sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Honey
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Wash the Yukon Gold potatoes thoroughly and cut them into bite-sized chunks, leaving the skin on for added texture.

Step 2

Bring a large pot of salted water to a boil and add the diced potatoes. Cook for 15-20 minutes or until the potatoes are tender when pierced with a fork. Drain the potatoes and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the diced ham, celery, red onion, and chopped dill pickles.

Step 4

In a separate smaller bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, honey, chopped parsley, salt, and black pepper to create the dressing.

Step 5

Add the slightly cooled potatoes to the bowl with the ham and vegetables. Pour the dressing over the mixture and gently toss until everything is evenly coated.

Step 6

Taste and adjust seasoning if needed. Add additional salt or pepper to suit your preference.

Step 7

Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld together. For best results, refrigerate for 3-4 hours.

Step 8

Before serving, sprinkle the top of the salad lightly with paprika for a touch of color, if desired.

Step 9

Serve chilled as a side dish or main course. Enjoy!
