Ingredients

  • 2 lb ground beef (80/20)
  • 1 cup breadcrumbs
  • 0.5 cup whole milk
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 large egg
  • 2 tbsp Worcestershire sauce
  • 0.5 cup ketchup
  • 1 tbsp prepared mustard
  • 2 tsp dried parsley
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 2 tbsp brown sugar
  • 0.5 tsp paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with foil or parchment paper for easy cleanup.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 2–3 minutes to allow the breadcrumbs to absorb the milk.

Step 3

In a large mixing bowl, combine the ground beef, onion, garlic, egg, Worcestershire sauce, 1/4 cup of ketchup, mustard, parsley, salt, and black pepper. Add the breadcrumb mixture and mix thoroughly with clean hands or a sturdy spoon until evenly incorporated. Be careful not to overmix or the meatloaf might become dense.

Step 4

Transfer the meat mixture onto the prepared baking sheet. Shape it into a loaf approximately 4 inches wide and 3 inches tall.

Step 5

In a small bowl, whisk together the remaining 1/4 cup ketchup, brown sugar, and paprika. Spread this glaze evenly over the top of the meatloaf.

Step 6

Bake the meatloaf in the preheated oven for 55–60 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.

Step 7

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Resting helps retain the juices and makes slicing easier.

Step 8

Slice and serve with mashed potatoes, green beans, or your favorite side dishes. Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
