Ingredients

  • 12 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 cloves garlic cloves, minced
  • 0.5 tsp red pepper flakes
  • 0.25 cup vodka
  • 0.75 cup heavy cream
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper
  • 0 as needed water for boiling pasta

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

Step 2

While the pasta cooks, season the shrimp with salt and black pepper.

Step 3

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Add the shrimp in a single layer and cook for 2 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium. Add another tablespoon of butter and olive oil. Stir in the minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.

Step 5

Carefully pour in the vodka and let it simmer for 2-3 minutes, allowing the alcohol to cook off.

Step 6

Stir in the heavy cream, lemon zest, and lemon juice. Simmer for 3-5 minutes until the sauce thickens slightly.

Step 7

Reduce the heat to low and stir in the Parmesan cheese, adding it gradually to avoid clumping. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 8

Return the cooked shrimp to the skillet and toss to coat in the sauce. Season with additional salt and black pepper to taste.

Step 9

Add the cooked pasta to the skillet and toss everything together until well combined.

Step 10

Garnish with freshly chopped parsley and serve immediately. Enjoy!
