Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.75 cup brown sugar
  • 0.5 cup molasses
  • 1 large egg
  • 0.75 cup whole milk
  • 1.5 cups fresh blueberries
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or an 8x8-inch square baking dish.

Step 2

In a medium mixing bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream together the butter and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Mix the molasses and egg into the butter-sugar mixture until well combined.

Step 5

Add the dry ingredients to the wet mixture in three parts, alternating with the milk. Start and end with the dry ingredients. Mix just until combined, being careful not to overmix.

Step 6

Gently fold the fresh blueberries into the batter, being sure to distribute them evenly throughout.

Step 7

Pour the batter into the prepared pan, spreading it evenly with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean and the edges pull slightly away from the pan.

Step 9

Cool the gingerbread in the pan on a wire rack for 10 minutes, then carefully remove it from the pan to cool completely.

Step 10

Dust the cooled gingerbread with powdered sugar before serving, if desired. Slice and enjoy!
