Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 2 cups Cooked white or brown rice
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 can (10 oz) Diced tomatoes with green chiles, drained
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Fresh lime juice

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the ground beef to the skillet and cook, breaking it up with a spatula, until no longer pink, about 6-8 minutes. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, cumin, paprika, salt, and black pepper, ensuring the meat is evenly coated with seasoning.

Step 6

Add the drained black beans, diced tomatoes with green chiles, and cooked rice to the skillet. Mix everything together and cook for 5 minutes to heat through.

Step 7

Stir in the fresh lime juice and chopped cilantro. Adjust seasoning to taste if necessary.

Step 8

Remove from heat and let the filling cool slightly before using.

Step 9

Use this mixture to fill burritos, tacos, or as a topping for taco bowls. Enjoy!
