Ingredients

  • 1 lb Ground beef (80/20 blend)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Garlic powder
  • 0.25 tsp Smoked paprika
  • 4 slices Cheddar cheese slice
  • 4 pieces Brioche buns
  • 2 tbsp Butter
  • 0.25 cup Mayonnaise
  • 2 tbsp Ketchup
  • 1 tbsp Dill pickle relish
  • 1 tsp Yellow mustard
  • 1 cup Iceberg lettuce (shredded)
  • 1 large Tomato (sliced)
  • 0.5 piece Red onion (sliced into rings)
  • 8 slices Pickle slices

Directions

Step 1

In a large bowl, combine the ground beef, salt, black pepper, garlic powder, and smoked paprika. Mix gently until just combined; do not overwork the meat.

Step 2

Divide the beef mixture into 4 equal portions and shape them into patties about 1/2 inch thick. Press a slight indentation into the center of each patty to ensure even cooking.

Step 3

Preheat a skillet or grill pan over medium-high heat. Cook the burger patties for 3-4 minutes on the first side, without pressing down on them.

Step 4

Flip the patties and cook for another 3-4 minutes on the other side. Add a slice of cheddar cheese to each patty during the last minute of cooking. Cover the pan to melt the cheese and cook until the patties reach an internal temperature of 160°F (70°C).

Step 5

While the burgers are cooking, toast the brioche buns. Spread the butter onto the cut sides of the buns and place them face down in a separate heated skillet or on the grill for 1-2 minutes until golden and toasted.

Step 6

Prepare the special sauce by mixing mayonnaise, ketchup, dill pickle relish, and yellow mustard in a small bowl. Set aside.

Step 7

Assemble the burgers: Spread a generous amount of the special sauce onto the bottom half of each brioche bun. Layer with shredded iceberg lettuce, a cheesy burger patty, a slice of tomato, a few red onion rings, and 2 pickle slices. Cover with the top bun.

Step 8

Serve immediately with fries on the side and enjoy your Lee's Family Diner Becky Burger copycat!
