Ingredients

  • 6 large Yellow onions
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 tablespoons Brown sugar
  • 1 cup Chardonnay wine
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the onions and thinly slice them into even wedges or rings for uniform cooking.

Step 2

Heat the olive oil and butter together in a large, heavy-bottomed skillet over medium heat until the butter is fully melted and begins to sizzle.

Step 3

Add the sliced onions to the skillet and stir to coat them evenly with the oil and butter. Reduce the heat to medium-low and cook the onions, stirring occasionally, for 25-30 minutes until they become golden and caramelized.

Step 4

Sprinkle the brown sugar over the onions and stir to combine. Allow the sugar to dissolve into the onions, cooking for an additional 5 minutes.

Step 5

Pour in the Chardonnay wine, allowing it to deglaze the pan. Scrape up any browned bits from the bottom of the skillet and stir well.

Step 6

Add the balsamic vinegar, fresh thyme, salt, and black pepper. Stir to combine and reduce the heat to low.

Step 7

Simmer the mixture for 15-20 minutes, stirring occasionally, until the liquid reduces and the marmalade reaches a thick, jam-like consistency.

Step 8

Taste the marmalade and adjust the seasoning with additional salt or pepper if needed.

Step 9

Remove the skillet from the heat and allow the onion marmalade to cool slightly before transferring it to an airtight jar or container.

Step 10

Store in the refrigerator for up to two weeks and serve warm or at room temperature with your favorite bread, meats, or cheeses.
