Ingredients

  • 2 pounds Ground beef (80% lean)
  • 1 pound Ground pork
  • 2 large Eggs
  • 1 cup Grated Parmesan cheese
  • 1 cup Almond flour
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup, divided Low-sugar ketchup

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, and eggs. Mix gently until just combined.

Step 3

Add in the Parmesan cheese, almond flour, finely chopped onion, minced garlic, fresh parsley, salt, black pepper, paprika, and Worcestershire sauce. Mix thoroughly without overworking the meat.

Step 4

Gradually fold in 1/4 cup of the low-sugar ketchup. Reserve the remaining 1/4 cup for topping.

Step 5

Shape the meat mixture into a loaf shape on the prepared baking sheet or press it evenly into a loaf pan.

Step 6

Spread the reserved 1/4 cup of low-sugar ketchup evenly over the top of the loaf.

Step 7

Place the meatloaf in the oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.

Step 8

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing to allow the juices to redistribute.

Step 9

Slice and serve warm. Enjoy with your favorite low-carb sides like steamed vegetables or a fresh green salad!
