Cook the Mueller's lasagna noodles according to the package instructions. Drain and lay flat on a clean kitchen towel to prevent sticking.
In a large skillet or saucepan, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another minute.
Add the ground beef and ground pork (or sausage) to the skillet. Cook until browned, breaking up any large chunks with a spoon. Drain excess fat if necessary.
Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, black pepper, sugar, and 2 cups of water. Bring the mixture to a simmer and cook for 20 minutes, stirring occasionally. Taste and adjust seasoning as needed.
In a medium bowl, combine ricotta cheese, egg, grated Parmesan, and parsley (if using). Mix until fully incorporated.
To assemble the lasagna, spread a thin layer of the meat sauce on the bottom of a 9x13-inch baking dish. Lay 3 lasagna noodles on top of the sauce. Spread 1/3 of the ricotta mixture evenly over the noodles. Sprinkle 1 cup of shredded mozzarella over the ricotta. Add another layer of meat sauce.
Repeat the layering process (noodles, ricotta mixture, mozzarella, meat sauce) two more times, finishing with a layer of meat sauce on top.
Sprinkle the remaining 1 cup of shredded mozzarella evenly over the top layer of sauce.
Cover the baking dish with aluminum foil, ensuring it does not touch the cheese. Bake in the preheated oven for 25 minutes.
Remove the foil and bake uncovered for an additional 20 minutes, or until the cheese is melted and bubbling and the lasagna is heated through.
