Ingredients

  • 100 grams Unsalted butter
  • 150 grams Dark chocolate (gluten-free certified)
  • 150 grams Granulated sugar
  • 50 grams Light brown sugar
  • 3 whole Large eggs
  • 1 teaspoon Vanilla extract
  • 80 grams Gluten-free all-purpose flour blend
  • 20 grams Cocoa powder (unsweetened, gluten-free certified)
  • 0.5 teaspoon Salt
  • 100 grams White chocolate chips (gluten-free certified)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line an 8-inch (20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium, heatproof bowl, melt the butter and dark chocolate together over a double boiler or in 30-second intervals in the microwave, stirring after each interval until smooth. Let it cool slightly.

Step 3

Whisk in the granulated sugar and light brown sugar into the chocolate mixture until well combined.

Step 4

Add the eggs, one at a time, whisking thoroughly after each addition. Stir in the vanilla extract.

Step 5

In a separate bowl, sift together the gluten-free flour blend, cocoa powder, and salt. Fold this dry mixture into the wet mixture using a spatula until just combined, being careful not to overmix.

Step 6

Gently fold in the white chocolate chips, reserving a few to sprinkle on top if desired.

Step 7

Pour the batter into the prepared pan, spreading it out evenly with the spatula. Sprinkle the reserved white chocolate chips on top, if using.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the edges are set but the center is slightly fudgy when tested with a toothpick.

Step 9

Allow the brownies to cool completely in the pan before lifting them out using the parchment overhang. Slice into 9 squares and serve.
