In a large mixing bowl, combine ground pork, minced garlic, chopped green onion, shredded napa cabbage, and crumbled tofu. Mix well to combine the ingredients evenly.
Add soy sauce, sesame oil, black pepper, and salt to the mixture. Stir thoroughly to season and incorporate all ingredients evenly.
Prepare a clean workspace for assembling the dumplings. Place a small bowl of water nearby.
Take one dumpling wrapper and spoon about one teaspoon of filling into the center. Be careful not to overfill.
Dip your finger in the bowl of water and moisten the edges of the wrapper lightly. Fold the wrapper in half over the filling to form a half-moon shape and press the edges firmly to seal. Crimp the edges if desired.
Repeat the process with the remaining wrappers and filling until all are used.
To fry the dumplings, heat 2 tablespoons of cooking oil in a non-stick pan over medium-high heat.
Place dumplings in the pan in a single layer, ensuring they do not touch each other. Cook for 2-3 minutes until the bottoms are golden brown.
Add 120 milliliters of water to the pan and cover with a tight-fitting lid. Allow dumplings to steam for about 5-7 minutes.
Once the water has evaporated, remove the lid, reduce the heat to low, and allow the dumplings to crisp up for another 1-2 minutes.
Remove from pan and serve hot with your choice of dipping sauce, such as soy sauce or a vinegar-soy sauce blend.
