Ingredients

  • 1 unit whole turkey (10-12 pounds)
  • 0.5 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper, freshly ground
  • 1 teaspoon paprika (optional, for color)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • 2 cups aromatics (such as onion, garlic, lemon, or fresh herbs like rosemary or thyme)

Directions

Step 1

Preheat your oven to 450°F (230°C). Position the oven rack in the lower third of the oven to allow the turkey to fit comfortably.

Step 2

Remove the neck and giblets from the turkey cavity, if present. Rinse the turkey inside and out with cold water, then pat thoroughly dry using paper towels.

Step 3

Using your hands, loosen the skin from the turkey breast and legs by gently sliding your fingers under the skin. Be careful not to tear the skin.

Step 4

In a small bowl, mix the softened butter, olive oil, kosher salt, black pepper, and any optional spices (paprika, garlic powder, onion powder) into a smooth paste.

Step 5

Rub the butter mixture generously under the skin, on top of the skin, and inside the cavity of the turkey. Massage it evenly all over for a flavorful finish.

Step 6

Fill the turkey cavity with your chosen aromatics, such as onion wedges, garlic cloves, lemon halves, or fresh herbs.

Step 7

Tuck the wings under the turkey to ensure even roasting. Tie the legs together with kitchen twine to maintain the bird’s shape.

Step 8

Place the turkey on a roasting rack set in a large roasting pan, breast side up.

Step 9

Insert an oven-safe meat thermometer into the thickest part of the breast without touching the bone.

Step 10

Roast the turkey at 450°F (230°C) for the first 30 minutes to achieve a golden brown color and crispy skin.

Step 11

After 30 minutes, reduce the oven temperature to 400°F (200°C) and continue roasting for about 1.5 hours, or until the internal temperature of the breast reaches 160°F (71°C) and the thighs reach 170°F (77°C).

Step 12

If the skin begins to darken too quickly, loosely tent the turkey with aluminum foil during the roasting process.

Step 13

Once done, remove the turkey from the oven and transfer it to a cutting board. Let it rest, loosely covered with foil, for 20-30 minutes to allow the juices to redistribute.

Step 14

Carve the turkey and serve with your favorite side dishes. Enjoy!
