Ingredients

  • 1 cup Pumpkin puree (unsweetened)
  • 2 large Eggs
  • 0.5 cup Unsweetened applesauce
  • 2 teaspoons Vanilla extract
  • 0.25 cup Maple syrup
  • 1.5 cups Whole wheat flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 1 optional Nonstick cooking spray or muffin liners

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with nonstick cooking spray or line it with muffin liners.

Step 2

In a large mixing bowl, combine the pumpkin puree, eggs, applesauce, vanilla extract, and maple syrup. Whisk together until the mixture is smooth and well combined.

Step 3

In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

Step 4

Gradually fold the dry ingredients into the wet ingredients using a spatula or spoon. Mix until just combined—do not overmix.

Step 5

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 6

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 8

Enjoy these muffins warm or store them in an airtight container for up to 4 days at room temperature, or freeze for longer storage.
