Ingredients

  • 0.5 cups Ground flaxseed
  • 1 cups Whole wheat flour
  • 0.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 0.5 cups Unsweetened applesauce
  • 0.33 cups Honey
  • 0.5 cups Milk (dairy or plant-based)
  • 1 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the ground flaxseed, whole wheat flour, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.

Step 3

In a medium mixing bowl, beat the eggs and mix in the applesauce, honey, milk, and vanilla extract until smooth and well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 6

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Enjoy warm or store in an airtight container at room temperature for up to 3 days. These muffins also freeze well!
