Ingredients

  • 1 medium head Green cabbage
  • 0.5 Red onion
  • 3 tablespoons Apple cider vinegar
  • 4 tablespoons Olive oil
  • 2 teaspoons Dijon mustard
  • 2 tablespoons Erythritol
  • 1 teaspoon Celery seeds
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Remove the outer leaves of the cabbage, cut it into quarters and remove the core. Thinly slice the cabbage using a sharp knife or a mandoline for even slices.

Step 2

Peel and thinly slice the red onion into half-moon shapes.

Step 3

Place the sliced cabbage and onion into a large mixing bowl and toss them together until evenly combined.

Step 4

In a separate mixing bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, erythritol, celery seeds, sea salt, and ground black pepper until well combined.

Step 5

Pour the dressing over the cabbage and onion mixture. Use tongs or clean hands to toss everything together until the vegetables are well coated in the dressing.

Step 6

Allow the salad to sit and marinate for at least 30 minutes in the refrigerator to let the flavors meld together. You can also prepare it a day in advance for even better taste.

Step 7

Before serving, toss the salad again and adjust seasoning with additional salt or pepper to taste, if desired.

Step 8

Serve chilled as a side dish, and enjoy your Keto Krautsalat!
