Ingredients

  • 500 grams Beef, thinly sliced (ribeye or sirloin)
  • 500 grams Cauliflower rice
  • 1 medium Onion, thinly sliced
  • 60 ml Coconut aminos
  • 120 ml Water
  • 2 tablespoons Mirin (sugar-free)
  • 1 tablespoon Erythritol
  • 1 tablespoon Sesame oil
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, minced
  • 2 stalks Green onions, sliced

Directions

Step 1

Prepare the cauliflower rice by either grating the cauliflower using a box grater or processing it in a food processor until it resembles rice-sized grains.

Step 2

Heat a large skillet over medium-high heat. Add sesame oil.

Step 3

Once the oil is hot, add the sliced onions and sauté for 2-3 minutes until they become translucent.

Step 4

Add the minced garlic and grated ginger, cooking for an additional 30 seconds until fragrant.

Step 5

Add the thinly sliced beef to the skillet and cook for about 3-4 minutes until browned and cooked through.

Step 6

In a small bowl, combine coconut aminos, water, sugar-free mirin, and erythritol. Stir until erythritol is dissolved.

Step 7

Pour the sauce mixture into the skillet with the beef and onions. Reduce the heat to medium-low, allowing the mixture to simmer for 5 minutes until slightly thickened.

Step 8

In a separate pan over medium heat, lightly sauté the prepared cauliflower rice for 3-4 minutes until heated through and tender, but not mushy.

Step 9

Divide the cauliflower rice evenly among serving bowls, then top with the beef mixture.

Step 10

Garnish with sliced green onions and serve immediately for a comforting, keto-friendly Japanese meal.
