Ingredients

  • 1 cup Almond flour
  • 0.5 cup Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 0.5 teaspoon Xanthan gum
  • 0.75 cup Boiling water
  • 0.25 cup Unsalted butter
  • 0.25 cup Sesame seeds
  • 3 tablespoons Erythritol granulated sweetener
  • 0.5 teaspoon Vanilla extract
  • 2 inch Fresh ginger
  • 4 cups Water
  • 2 tablespoons Additional erythritol for syrup

Directions

Step 1

In a medium bowl, mix together the almond flour, coconut flour, psyllium husk powder, and xanthan gum.

Step 2

Slowly add boiling water while stirring continuously to form a dough. Use your hands to knead it gently until the dough is smooth and elastic.

Step 3

In a small saucepan, melt the unsalted butter over medium heat. Add sesame seeds and stir until fragrant and golden, about 3-5 minutes.

Step 4

Remove from heat, add erythritol sweetener and vanilla extract to the sesame mix, stirring to combine. Allow to cool.

Step 5

Divide the dough into 18 equal pieces. Flatten each piece and place a small spoonful of the sesame filling in the center. Gather the edges of the dough to cover the filling, rolling it gently into a ball.

Step 6

Repeat the process with the remaining dough and filling.

Step 7

In a separate pot, bring 4 cups of water to a boil. Add ginger and additional erythritol for sweetness. Simmer for about 5 minutes to infuse the water with ginger flavor, then remove the ginger pieces.

Step 8

Gently place the rice balls in the boiling ginger water. Cook for 5-7 minutes until they float to the surface.

Step 9

Serve the glutinous rice balls in bowls with the ginger syrup.
