Ingredients

  • 4 cups Romaine lettuce
  • 2 cups Baby spinach
  • 1 cup Cherry tomatoes

  • 1 medium Red bell pepper
  • 1 large Avocado
  • 1 cup Cheddar cheese

  • 0.25 cup Parmesan cheese
  • 0.5 cup Olives (black or green)
  • 0.25 cup Extra-virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce and baby spinach. Tear the romaine lettuce into bite-sized pieces and place both the romaine and spinach into a large salad bowl.

Slice the cherry tomatoes in half and add them to the bowl.
