Ingredients

  • 1 pound pork loin or flank steak (thinly sliced)
  • 2 teaspoons cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 garlic cloves (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 4 green onions (sliced)
  • 2 eggs (beaten)
  • 6 pita pockets or thin flour pancakes
  • 0 optional toppings like additional hoisin sauce or sriracha

Directions

Step 1

In a medium bowl, combine the sliced pork or beef with cornstarch, 1 tablespoon of soy sauce, and 1 teaspoon of rice vinegar. Mix well and allow to marinate for 10 minutes.

Step 2

Meanwhile, in a small bowl, whisk together the remaining soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated meat and stir-fry until browned and just cooked through, about 3-5 minutes. Remove the meat from the skillet and set aside.

Step 4

In the same skillet, heat the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring for 30 seconds until fragrant.

Step 5

Add the shredded cabbage, carrots, and half of the green onions to the skillet. Stir-fry the vegetables until slightly softened, about 2-3 minutes.

Step 6

Push the vegetables to one side of the skillet and pour in the beaten eggs. Scramble the eggs until cooked, then mix them into the vegetables.

Step 7

Return the cooked meat to the skillet along with the prepared sauce. Toss everything together to coat evenly and cook for an additional 1-2 minutes.

Step 8

Warm the pita pockets or flour pancakes in a dry skillet or microwave. Fill each pocket or pancake with the Moo Shu mixture, garnishing with the remaining green onions and any optional toppings like hoisin sauce or sriracha.

Step 9

Serve immediately and enjoy your Kelly's Moo Shu Pork or Beef Pockets!
