Ingredients

  • 6 whole Roma tomatoes
  • 2 whole Jalapeño peppers
  • 2 whole Serrano peppers
  • 3 whole Garlic cloves
  • 1 whole Red onion
  • 0.5 cups Fresh cilantro
  • 1 whole Lime
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Smoked paprika
  • 1 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 3

Place the Roma tomatoes, jalapeño peppers, serrano peppers, and unpeeled garlic cloves on the baking sheet. Drizzle with olive oil and toss to coat evenly.

Step 4

Roast the vegetables in the oven for 10 minutes or until the tomatoes are soft, the peppers are slightly charred, and the garlic is fragrant.

Step 5

Remove the tray from the oven and let the roasted vegetables cool for 5 minutes.

Step 6

Peel the garlic cloves and remove the stems from the peppers. If desired, remove the seeds from the peppers to reduce the heat.

Step 7

Transfer the roasted vegetables to a blender or food processor along with the chopped red onion, fresh cilantro, juice of the lime, salt, ground cumin, and smoked paprika.

Step 8

Pulse the ingredients in the blender to your desired consistency. For chunky salsa, use short pulses. For smoother salsa, blend longer.

Step 9

Taste the salsa and adjust the seasonings if needed, adding more salt or lime juice to suit your preference.

Step 10

Transfer the salsa to a serving bowl and let it sit for at least 15 minutes to allow the flavors to blend.

Step 11

Serve with tortilla chips or use as a topping for tacos, burritos, or any favorite dish.
