Ingredients

  • 3 large Ripe bananas
  • 2 large Eggs
  • 0.5 cup Plain Greek yogurt
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 1.5 cups Whole wheat flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped walnuts or dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

Add the eggs, Greek yogurt, honey, and vanilla extract to the mashed bananas, and whisk until well combined.

Step 4

In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix, as this can make the bread dense.

Step 6

If using walnuts or dark chocolate chips, fold them gently into the batter.

Step 7

Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.

Step 8

Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the banana bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Slice and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
