Ingredients

  • 4 large Russet potatoes
  • 1 small Onion
  • 2 cloves Garlic cloves
  • 4 cups Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese
  • 6 slices Bacon
  • 0.25 cup Chives or green onions

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Finely chop the onion and mince the garlic cloves.

Step 2

Place the diced potatoes, chopped onion, and minced garlic into the crockpot.

Step 3

Pour in the chicken broth and season with salt and black pepper. Mix gently to combine.

Step 4

Cover the crockpot with the lid and cook on high for 4 hours, or on low for 7-8 hours, until the potatoes are fork-tender.

Step 5

While the soup is cooking, cook the bacon in a skillet until crispy. Remove and place on a paper towel to drain, then crumble into small pieces. Set aside.

Once the potatoes are tender, use an immersion blender to partially blend the soup, leaving some chunks for texture. If you don’t have an immersion blender, you can remove half the soup, blend it in a regular blender, and return it to the crockpot.
