Ingredients

  • 2 cups rolled oats
  • 1 cup sesame seeds
  • 1 cup sunflower seeds
  • 1 cup chopped almonds
  • 1 cup honey
  • 1 cup natural peanut butter
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cup chocolate chips (optional)

Directions

Step 1

Prepare a 9x9-inch pan by lining it with parchment paper, leaving overhangs on the sides for easy removal.

Step 2

In a large dry skillet over medium-low heat, toast the rolled oats for 3-4 minutes, stirring often, until lightly golden and aromatic. Remove and place in a large mixing bowl.

Step 3

In the same skillet, toast the sesame seeds and sunflower seeds for 2-3 minutes, stirring frequently, until fragrant. Add them to the oats along with the chopped almonds.

Step 4

In a small saucepan, combine the honey, peanut butter, and brown sugar. Heat over medium-low heat, stirring constantly, until the mixture is smooth and just starts to bubble, about 2-3 minutes.

Step 5

Remove the saucepan from heat and stir in the vanilla extract and salt. Let it cool for 1-2 minutes.

Step 6

Pour the warm honey-peanut butter mixture over the dry ingredients in the mixing bowl. Stir well until the mixture is fully combined and sticky. If using chocolate chips, fold them in gently at this stage.

Step 7

Transfer the mixture to the prepared pan and press it evenly and firmly into place using the back of a spoon or a piece of parchment paper.

Refrigerate for at least 1 hour, or until firm and set.

Once chilled, use the parchment overhangs to lift the block out of the pan. Cut into 12 bars using a sharp knife.

Step 10

Store the bars in an airtight container in the refrigerator for up to 1 week, or wrap individually and freeze for up to 2 months.
