Ingredients

  • 4 pieces Tilapia fillets
  • 1 cup Jasmine rice
  • 1.5 cups Water
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Paprika
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Fresh parsley
  • 4 pieces Lemon wedges

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the jasmine rice and water. Bring the water to a boil over high heat.

Step 3

Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes. Remove from heat and let it sit, covered, for another 5 minutes before fluffing with a fork.

Step 4

Meanwhile, pat the tilapia fillets dry with a paper towel and season both sides with garlic powder, paprika, salt, and black pepper.

Step 5

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 6

Once the butter is melted and the pan is hot, add the seasoned tilapia fillets. Cook each side for 3-4 minutes or until the fish flakes easily with a fork and becomes golden brown.

Step 7

Remove the tilapia from the skillet and place on a plate. Cover with foil to keep warm.

Step 8

Reduce the heat to low and add the remaining 1 tablespoon of butter to the skillet. Stir in the chopped parsley and allow the butter to melt, scraping up any browned bits from the pan.

Step 9

To serve, place a scoop of jasmine rice onto each plate, top with a tilapia fillet, and drizzle the butter-parsley sauce over the fish. Serve with a lemon wedge on the side for squeezing over the top.
