Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 small Jalapeño peppers, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 10 ounces Diced tomatoes with green chilies (canned)
  • 8 ounces Cream cheese, softened
  • 2 cups Shredded cheddar cheese
  • 0.25 cup Milk
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 1 bag Tortilla chips

Directions

Step 1

In a large skillet, cook the ground beef over medium heat until browned and fully cooked, about 6-8 minutes. Drain any excess grease.

Step 2

Add the diced onion, minced garlic, and minced jalapeños to the skillet with the cooked beef. Cook for 3-4 minutes until the vegetables soften and become fragrant.

Step 3

Stir in the chili powder, cumin, paprika, salt, and black pepper, ensuring everything is evenly coated with the spices.

Step 4

Add the canned diced tomatoes with green chilies (do not drain) to the skillet. Mix well and let simmer for 2 minutes.

Step 5

Reduce the heat to low and add the softened cream cheese. Stir continuously until the cream cheese melts and is fully incorporated into the mixture.

Step 6

Gradually add the shredded cheddar cheese, one handful at a time, stirring until completely melted and smooth. If the dip becomes too thick, stir in the milk a little at a time to reach your desired consistency.

Step 7

Once the dip is creamy and well combined, taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Transfer the dip to a serving bowl, garnish with freshly chopped cilantro if desired, and serve warm with tortilla chips.
