Ingredients

  • 4 tablespoons Unsalted butter
  • 2 Apples (medium, peeled, cored, and sliced thinly)
  • 1 Jalapeno (seeded and finely diced)
  • 3 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 4 Eggs
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 0.25 teaspoons Salt
  • 1 tablespoon Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Place a 10-inch cast iron skillet over medium heat and melt 2 tablespoons of butter.

Step 3

Add the sliced apples to the skillet, and cook for 5-7 minutes, stirring occasionally, until they begin to soften.

Step 4

Stir in the diced jalapeno, brown sugar, cinnamon, and vanilla extract. Continue to cook for another 3 minutes until the mixture is slightly caramelized. Remove from heat and set aside.

Step 5

In a large mixing bowl, thoroughly whisk the eggs and milk together.

Gradually add the flour, granulated sugar, and salt to the egg mixture, whisking until smooth and lump-free. The batter will be slightly thin.

Add the remaining 2 tablespoons of butter to the skillet with the apple mixture and allow it to melt. Swirl to coat the edges of the skillet evenly.
