Ingredients

  • 4 whole garlic bulbs
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the tops off the garlic bulbs to expose the cloves. Place the bulbs on a sheet of foil and drizzle them with 1 tablespoon of olive oil. Wrap the bulbs tightly in the foil and bake for 35-40 minutes, or until the cloves are soft and golden brown.

While the garlic roasts, finely chop the onion.
