Ingredients

  • 170 grams Bittersweet chocolate (70% cocoa)
  • 3 tablespoons Unsalted butter
  • 1.5 cups Whole milk
  • 0.5 cups Heavy cream
  • 0.25 cups Granulated sugar
  • 3 units Large eggs
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Sea salt

Directions

Step 1

Preheat your oven to 325°F (165°C).

Chop the bittersweet chocolate into small pieces and place it in a heatproof bowl.

Add the unsalted butter to the chocolate and set the bowl over a pot of simmering water (double boiler). Stir occasionally until the chocolate and butter are completely melted and smooth. Remove from heat and set aside.

In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is just warm (do not boil).
