Preheat your oven to 325°F (165°C).
Chop the bittersweet chocolate into small pieces and place it in a heatproof bowl.
Add the unsalted butter to the chocolate and set the bowl over a pot of simmering water (double boiler). Stir occasionally until the chocolate and butter are completely melted and smooth. Remove from heat and set aside.
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is just warm (do not boil).
In a separate bowl, whisk the eggs gently. Gradually add the warm milk mixture to the eggs, whisking continuously to avoid curdling.
Stir in the melted chocolate mixture, vanilla extract, and sea salt until well combined and smooth.
Strain the mixture through a fine-mesh sieve into a large measuring cup or a clean bowl to remove any lumps.
Pour the mixture evenly into six 4-ounce ramekins or oven-safe cups.
Place the ramekins in a large baking dish or roasting pan. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins (creating a water bath).

Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, transfer to the refrigerator and chill for at least 2 hours or overnight.
