Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes (with juice)
  • 15 ounces tomato sauce
  • 2 cups elbow macaroni, uncooked
  • 2 cups water
  • 2 teaspoons paprika
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles with a wooden spoon as it cooks, about 5-7 minutes.

Step 2

Once the beef is cooked, drain any excess fat if necessary. Add the diced onion and minced garlic to the pot and sauté for another 3-4 minutes until fragrant and the onion is softened.

Step 3

Stir in the diced tomatoes (with their juice), tomato sauce, water, paprika, Italian seasoning, salt, and black pepper. Mix everything well to combine.

Step 4

Bring the mixture to a gentle boil. Once boiling, add the uncooked elbow macaroni and stir to make sure the pasta is submerged in the liquid.

Step 5

Reduce the heat to a simmer and cover the pot with a lid. Cook for about 12-15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom of the pot, until the macaroni is tender.

Step 6

Taste the goulash and adjust seasoning with more salt and pepper if needed.

Step 7

If desired, sprinkle shredded cheddar cheese and chopped parsley on top before serving.

Step 8

Serve warm in bowls and enjoy your comforting Jennie S Goulash!
