Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold, diced)
  • 0.5 teaspoon Salt
  • 1 tablespoon Granulated sugar (for crust)
  • 5 tablespoons Cold water
  • 2 cups Fresh strawberries (hulled and sliced)
  • 1.5 cups Fresh blueberries
  • 1 cup Fresh raspberries
  • 0.75 cups Granulated sugar (for filling)
  • 3 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 tablespoon Unsalted butter (for filling)
  • 1 unit Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)

Directions

Step 1

In a large bowl, whisk together the flour, salt, and granulated sugar for the crust.

Step 2

Using a pastry cutter or your fingertips, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Step 3

Gradually add cold water, 1 tablespoon at a time, mixing gently until the dough comes together.

Step 4

Divide the dough in half, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

Preheat the oven to 375°F (190°C).

Step 6

In a large mixing bowl, combine the strawberries, blueberries, raspberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Toss gently to coat the berries evenly.

Step 7

On a floured surface, roll out one disk of dough into a 12-inch circle and fit it into a 9-inch pie dish. Trim the excess dough, leaving about a 1-inch overhang.

Step 8

Pour the berry mixture into the prepared crust and dot the filling with 1 tablespoon of unsalted butter.

Step 9

Roll out the second disk of dough into a 12-inch circle. Place it over the filling and trim the excess dough. Crimp the edges to seal.

Step 10

Cut a few small slits in the top crust to allow steam to escape.

Step 11

In a small bowl, whisk together the egg and water to make an egg wash. Brush the wash over the top crust.

Step 12

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45–50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 13

Allow the pie to cool at room temperature for at least 2 hours before serving to let the filling set.
