Ingredients

  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 medium Red onion
  • 3 medium Carrots
  • 2 cups Broccoli florets
  • 3 tablespoons Olive oil
  • 4 large Garlic cloves
  • 1 teaspoon Dried Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash and prep the vegetables: slice the zucchini into half-moon shapes, cut the bell peppers into strips, dice the red onion into chunks, peel and slice the carrots diagonally, and separate the broccoli into small florets.
