  • 2 medium celery stalks (sliced)
  • 3 cloves garlic cloves (minced)
  • 1 pint Guinness stout
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 3 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 leaf bay leaf
  • 4 medium potatoes (quartered)
  • 2 tbsp parsley (chopped, for garnish)

Directions

Step 1

Preheat a large heavy-bottomed pot or Dutch oven over medium-high heat.

In a bowl, toss the beef cubes with flour, salt, and black pepper until evenly coated.

Heat the olive oil in the pot, then brown the beef in batches to avoid overcrowding. Brown all sides, about 2-3 minutes per side. Remove and set aside.

In the same pot, add the onion, carrots, and celery, and sauté for 5-7 minutes until softened. Add the garlic and cook for an additional minute.

Pour in the Guinness stout, scraping the bottom of the pot with a wooden spoon to deglaze and lift any browned bits.
