Ingredients

  • 2 cups dried green split peas
  • 8 cups water
  • 1 large onion
  • 2 medium carrots
  • 2 celery stalks
  • 1 smoked ham hock
  • 1 bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the dried split peas thoroughly under cold water until the water runs clear. Set aside.

Step 2

Peel and finely chop the onion. Peel and dice the carrots into small cubes. Slice the celery into thin pieces.

Step 3

In a large soup pot or Dutch oven, combine the rinsed split peas, water, and smoked ham hock. Bring to a boil over medium-high heat.

Skim off any foam that rises to the top as the soup begins to boil.

Step 5

Add the chopped onion, diced carrots, celery, bay leaf, and fresh thyme to the pot. Stir to combine.

Reduce the heat to low, cover the pot, and let the soup simmer for about 1.5 hours or until the peas are soft and the soup has thickened.
