Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 4 cloves minced garlic
  • 28 ounces canned diced tomatoes (with their juice)
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons cayenne pepper (optional for heat)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup water or beef stock
  • 2 tablespoons olive oil

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the diced onion and green bell pepper to the pot. Sauté for 5-7 minutes until the vegetables have softened.

Step 3

Add the minced garlic to the pot and cook for 1 minute, stirring frequently to prevent burning.

Step 4

Push the vegetables to the sides of the pot and add the ground beef to the center. Cook until the beef is thoroughly browned, breaking it apart with a wooden spoon as it cooks. Drain any excess fat if necessary.

Step 5

Stir the chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and black pepper into the beef and vegetable mixture. Cook for 1-2 minutes to bloom the spices for maximum flavor.

Step 6

Add the canned diced tomatoes (with juice), tomato sauce, kidney beans, black beans, and water (or beef stock) to the pot. Stir everything together until well combined.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and simmer for 60 minutes, stirring occasionally to prevent sticking.

Step 8

After simmering, taste and adjust seasoning if needed. If the chili is too thick, you can add additional water or stock to reach your desired consistency.

Step 9

Serve hot with your preferred toppings, such as shredded cheese, sour cream, chopped cilantro, or sliced jalapeños. Pair with warm cornbread or tortilla chips for a complete meal.
