Ingredients

  • 6 ounces Orange-flavored gelatin
  • 2 cups Boiling water
  • 1 cup Cold water
  • 20 ounces Crushed pineapple (with juice)
  • 1 cup Cottage cheese
  • 8 ounces Cool Whip (or whipped topping)
  • 1 cup Mini marshmallows
  • 15 ounces Mandarin oranges (drained)

Directions

Step 1

In a large mixing bowl, dissolve the orange-flavored gelatin in 2 cups of boiling water. Stir well until fully dissolved, about 2 minutes.

Step 2

Add 1 cup of cold water to the gelatin mixture and stir to combine. Let the mixture cool slightly, about 5–10 minutes.

Step 3

Stir in the crushed pineapple (including the juice) and mix well.

Step 4

Refrigerate the gelatin mixture for 30–45 minutes, or until it starts to thicken but has not fully set.

Step 5

Once the gelatin is thickened, fold in the cottage cheese, Cool Whip, and mini marshmallows until well combined.

Step 6

Gently fold in the drained mandarin oranges, being careful not to break them apart.

Step 7

Transfer the mixture to a serving dish or mold, smoothing out the top with a spatula.

Step 8

Refrigerate for at least 4 hours, or until fully set and chilled.

Step 9

Before serving, garnish with additional whipped topping or mandarin oranges, if desired.
