Ingredients

  • 1.5 cups Pomegranate seeds (arils)

  • 0.25 cups Red onion, thinly sliced
  • 2 tablespoons Fresh mint leaves, chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Honey
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Carefully cut the pomegranate in half and remove the seeds (arils). Collect about 1.5 cups and set aside. Be cautious to prevent juice from staining—hence the recipe's name!

Wash and thoroughly dry the mixed greens. Place them in a large salad bowl.
