Ingredients

  • 2.5 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 cups Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 pcs Large eggs
  • 2 teaspoons Vanilla extract
  • 1 cups Fresh strawberries, pureed
  • 0.5 cups Whole milk
  • 1 cups Strawberries, diced (for garnish)
  • 8 oz Cream cheese, softened
  • 0.5 cups Unsalted butter, softened (for frosting)
  • 4 cups Powdered sugar
  • 0.25 cups Strawberry puree (for frosting)
  • 1 teaspoons Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar using an electric mixer until light and fluffy (about 3-4 minutes).

Step 4

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Step 5

Slowly incorporate the dry ingredients into the wet ingredients, alternating with the strawberry puree and whole milk. Begin and end with the dry ingredients, mixing just until combined.

Step 6

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Remove cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Step 9

While the cakes are cooling, make the strawberry frosting. Beat the softened cream cheese and butter together in a mixing bowl until smooth and creamy.

Step 10

Gradually add powdered sugar, one cup at a time, beating on low speed until fully incorporated. Add the strawberry puree and vanilla extract, then beat on high speed until the frosting is fluffy.

Step 11

Once the cakes are completely cool, place one cake layer on a serving plate. Spread a generous layer of frosting on top.

Step 12

Place the second cake layer on top and frost the top and sides of the cake evenly.

Step 13

Decorate the cake with diced strawberries for garnish, pressing gently to adhere them to the frosting.

Step 14

Chill the cake in the refrigerator for at least 30 minutes before serving to allow the frosting to set. Slice and enjoy Granny’s Strawberry Cake!
