Ingredients

  • 1.5 cups Yellow cornmeal
  • 0.5 cup All-purpose flour
  • 1 tablespoon Sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1.5 cups Buttermilk
  • 1 large Egg
  • 0.25 cup Vegetable oil
  • 2 tablespoons Butter (for frying)

Directions

Step 1

In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, sugar, baking powder, and salt. Mix well to evenly distribute the ingredients.

Step 2

In a separate bowl, whisk together the buttermilk, egg, and vegetable oil until fully combined.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms. The batter should be slightly thick but still pourable. If it's too thick, add a tablespoon of buttermilk at a time until desired consistency is reached.

Step 4

Heat a large skillet or cast-iron pan over medium heat and add 1 tablespoon of butter. Allow the butter to melt and coat the pan.

Step 5

Spoon about 1/4 cup of batter onto the skillet for each piece of cornbread. Use the back of the spoon to gently spread it into a circle, if needed.

Step 6

Cook for 2-3 minutes on one side, or until the edges begin to set and the bottom turns golden brown.

Step 7

Flip the cornbread using a spatula and cook for another 2-3 minutes on the other side, until golden brown and cooked through.

Step 8

Repeat with the remaining batter, adding more butter to the skillet as necessary, until all the cornbread is fried.

Step 9

Serve warm with butter, honey, or alongside your favorite Southern dishes.
