Ingredients

  • 1 lb Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 cups Cooked long-grain white rice
  • 1 15-oz can Canned diced tomatoes, drained
  • 1 15-oz can Canned black beans, rinsed and drained
  • 1 cup Frozen corn kernels
  • 2 cups Cheddar cheese, shredded
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh cilantro, chopped (optional)
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it into small pieces with a spatula. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion becomes translucent and fragrant.

Step 4

Stir in the chili powder, ground cumin, salt, and black pepper, mixing to evenly coat the beef mixture with spices.

Step 5

In a large mixing bowl, combine the cooked beef mixture with cooked rice, diced tomatoes, black beans, frozen corn, and 1 cup of shredded cheddar cheese. Mix until everything is well incorporated.

Step 6

Transfer the mixture into the prepared casserole dish and spread it into an even layer.

Step 7

Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 9

Remove from the oven and let the casserole rest for 5 minutes before serving.

Step 10

Top with freshly chopped cilantro, if desired, and serve warm. Enjoy!
