Ingredients

  • 4 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 1 cup Cheddar cheese
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Chopped chives (optional)
  • 1 as needed for greasing Vegetable oil or cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a muffin tin or line it with non-stick liners.

Step 2

Peel and dice the potatoes into even chunks. Place them in a large pot of salted water and bring to a boil. Cook until the potatoes are fork-tender, about 10-12 minutes.

Step 3

Drain the potatoes and return them to the hot pot. Mash the potatoes until smooth, ensuring no lumps remain. Stir in the butter and milk until fully incorporated and smooth.

Step 4

Allow the mashed potatoes to cool slightly. Then, stir in the cheddar cheese, eggs, flour, baking powder, salt, and pepper. Mix until the batter is fully combined and smooth.

Step 5

If using, fold in the chopped chives for an extra burst of flavor.

Step 6

Spoon the potato mixture into the prepared muffin tin, filling each cup about two-thirds full. Smooth the tops with the back of a spoon.

Step 7

Bake in the preheated oven for 25-30 minutes, or until the potato puffs are golden brown and slightly crisp on the edges.

Step 8

Remove the muffin tin from the oven and let the potato puffs cool for 5 minutes before gently removing them from the tin.

Step 9

Serve warm as a side dish, appetizer, or snack. Garnish with additional chives if desired.
