Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 0.5 medium head Red cabbage
  • 1 cup Mayonnaise
  • 2 tablespoons Granulated sugar
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Celery seed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves from the green and red cabbage heads. Cut both cabbages in half, removing the core, then finely shred using a sharp knife, mandoline, or food processor. Transfer to a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

In a separate medium-sized bowl, prepare the coleslaw dressing by whisking together the mayonnaise, granulated sugar, apple cider vinegar, Dijon mustard, celery seed, salt, and black pepper until smooth and well combined.

Step 4

Pour the prepared dressing over the shredded cabbage and carrots in the large mixing bowl.

Step 5

Toss everything together thoroughly using tongs or clean hands until the vegetables are evenly coated with the dressing.

Step 6

Cover the bowl with plastic wrap or transfer the coleslaw to an airtight container. Refrigerate for at least 1 hour before serving to allow the flavors to meld.

Step 7

Before serving, give the coleslaw a quick stir to redistribute the dressing. Taste and adjust the seasoning with additional salt or pepper if needed.

Step 8

Serve cold as a side dish and enjoy!
