Ingredients

  • 1 lb pork shoulder
  • 2 tbsp olive oil
  • 1 large yellow onion
  • 3 cloves garlic cloves
  • 1 medium jalapeño
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 6 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 1.5 cups cooked black beans
  • 1.5 cups cooked pinto beans
  • 1 cup frozen corn kernels
  • 2 tbsp lime juice
  • 0.25 cup fresh cilantro
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0 optional for garnish sour cream
  • 0 optional for garnish shredded cheese
  • 0 optional for garnish tortilla chips

Directions

Step 1

Cut the pork shoulder into 1-inch cubes, trimming away excess fat, and season with a pinch of salt and black pepper.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the pork cubes and sear them for 2-3 minutes on each side until browned. Remove the pork and set aside.

Step 3

Dice the yellow onion, mince the garlic, and finely chop the jalapeño, removing seeds if you prefer less heat.

Step 4

In the same pot, add the onion, garlic, and jalapeño. Sauté for 5 minutes until softened and fragrant.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, and oregano. Cook for 1 minute to toast the spices.

Step 6

Return the seared pork to the pot and pour in the chicken broth. Bring to a boil, then lower the heat and simmer uncovered for 60 minutes, stirring occasionally.

Step 7

After an hour, add the diced tomatoes with green chilies, black beans, pinto beans, corn, salt, and black pepper. Simmer for another 20-30 minutes until the pork is tender and the flavors are well combined.

Step 8

Stir in the fresh lime juice and chopped cilantro just before serving.

Step 9

Serve hot, garnished with sour cream, shredded cheese, tortilla chips, or additional cilantro, if desired.
