Ingredients

  • 2 cups orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1 yellow bell pepper, diced
  • 0.25 cup fresh basil leaves, chopped
  • 0.5 cup crumbled feta cheese
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, until al dente.

Step 2

While the orzo is cooking, prepare the vegetables. Halve the cherry tomatoes, chop the spinach, dice the yellow bell pepper, and chop the fresh basil.

Step 3

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.

Step 4

Once the orzo is cooked, drain it and transfer it to a large mixing bowl. Allow it to cool slightly for about 5 minutes.

Step 5

Add the cherry tomatoes, spinach, yellow bell pepper, and chopped basil to the orzo.

Step 6

Pour the dressing over the orzo and vegetables, then toss everything together to coat evenly.

Step 7

Gently fold in the crumbled feta cheese.

Step 8

Taste and adjust seasoning if necessary, adding more salt or pepper to suit your preference.

Step 9

Serve immediately as a warm dish or refrigerate for 30 minutes to enjoy it as a chilled salad. Garnish with additional basil leaves, if desired.
