Ingredients

  • 100 g unsalted butter
  • 175 g dark muscovado sugar
  • 4 tbsp golden syrup
  • 350 g plain flour
  • 1 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 1 large egg
  • 200 g icing sugar
  • 3 tbsp water

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F and line two baking sheets with parchment paper.

Step 2

In a medium saucepan, gently melt the butter, dark muscovado sugar, and golden syrup over low heat. Stir frequently until the mixture is smooth, then remove from the heat and set aside to cool slightly.

Step 3

In a large mixing bowl, sift together the plain flour, bicarbonate of soda, ground ginger, ground cinnamon, and ground cloves.

Step 4

Pour the melted butter mixture into the bowl with the dry ingredients. Add in the egg and mix thoroughly until a soft dough forms.

Wrap the dough in cling film and chill it in the refrigerator for 30 minutes to make it easier to handle.

Once chilled, roll out the dough on a lightly floured surface to about 0.5 cm (1/4 inch) thick. Use a gingerbread man cookie cutter to cut out shapes and transfer them to the prepared baking sheets, leaving space between each cookie.

Bake in the preheated oven for 10-12 minutes or until the edges are slightly firm to the touch. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

To make the icing, sift the icing sugar into a small bowl and gradually add water, one tablespoon at a time, stirring constantly until you achieve a smooth piping consistency.

Step 9

Once the gingerbread men are completely cool, pipe on faces, buttons, and decorations using the prepared icing. Let the icing set before serving or storing in an airtight container.
