Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.5 cups Unsalted butter (softened)
  • 4 large Eggs
  • 0.5 cups Whole milk
  • 0.25 cups Freshly squeezed lemon juice
  • 2 tablespoons Lemon zest
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1.5 cups Powdered sugar
  • 3 tablespoons Lemon juice (for glaze)
  • 1 tablespoon Milk (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set the dry ingredients aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes with an electric mixer.

Step 4

Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Scrape down the sides of the bowl as needed.

Step 5

Mix in the lemon zest and lemon juice until combined.

Step 6

Gradually add the dry ingredients to the wet mixture in three additions, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined after each addition. Do not overmix.

Step 7

Pour the batter into the prepared cake pan and spread it evenly with a spatula. Tap the pan gently on the counter to release any air bubbles.

Step 8

Bake the cake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 10

While the cake cools, prepare the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and milk until smooth and slightly thickened.

Step 11

Once the cake is completely cool, drizzle the glaze over the top, allowing it to drip down the sides for a decorative effect.

Step 12

Let the glaze set for 10-15 minutes, then slice and serve. Enjoy your Fran’s Lemon Cake with family and friends!
